Just wondering, what should I do if an annoying skeptic spectator looks at their card before it goes on my deck?

You might be able to figure out a system that allows you to give them any card in the deck, meaning you could just give them the card they chose. But I think the best thing would be to present it so that the big reveal is at the end when they can turn over both cards at the same time. Probably wouldn't even hurt to tell them not to look at it.
