How to force an amount of cards?

For a trick that I am working on, I want to able to deal cards on the table and let the spectator say stop and they always end up with an amount of card that I want. I remember seeing magicians doing things to the similar effect. Does anyone know how it is done or the name of the sleight??

If the method is owned by somebody, I just need the name of the method.

There are millions of ways to do this. You need to be a bit more specific as to the amount, or reason.

Check out Dani DaOrtiz work on the phycological timing force, he's quite well known for this type of technique which he executes masterfully... it's exactly what your looking for...

You could always tell them you are going to deal it super slow and deal them REALLY SLOW and they will probably say stop at 4 or 5. Then, get a break under the 7th card and load it onto the bottom of the packet on the off beat.

This is amazing. It is much better than what I meant, and this requires a lot of practice. What I meant was like super slow motion. Essentially finishing a 1 card deal every 10 seconds.

It does require some practice, a bit of confidence and courage but like Dani says it's more in the attitude you present as a performer and also understanding basic human psychology, if done correctly they will stop when you need them to... I've preformed this effect a couple time it's pretty fun to do, also it's good practice for this type of technique...
