Well, to throw in my 2 cents, there is some great advice here. Katie's advice is a good question to ask yourself. And be honest. However, when you are ready to jump in, you should read some books on working in restaurants, that may cost you some coin, but will be very worth it. You likely know enough material to work a restaurant already. What you need is going to be how to create routines that are suitable for a restaurant.
Lots of effects will work great. When I started back in 2004, I did all sorts of random tricks. They worked great. I did lots of IT work, toothpick tricks, coin tricks, a few card tricks, liquid metal (my forks lol), sponge balls (works great for adults too! Don't underestimate the sponge balls!), TT work, etc.
The Restaurant helped me to build my chops and work out new routines, and work on 'mastering' different effects.
